I Met Vegans on Long Island!
Thanks to the tireless efforts of our MeetUp organizer Jennifer, I had an opportunity on May 3, 2008 to visit the lovely town of Bellport and join with fellow vegans for lunch at the Sugar Loaf Cafe.
This was a very good experience for the once vegetarian, now vegan Carl

After lunch we crossed the street for vegan shopping at a local health store
More details to follow as I'm heading up tomorrow to Milford, MA. for a Mother's Day celebration at my daughter Jeanette's home!

Carl's (Hot) Pumpkin Lava Pudding
I opened my cabinet, and staring at me was my 15 ounce can of pure pumpkin.
It had to be punished and returned to the Pumpkin Volcano.
What follows is it's journey:
1-15oz can Libby's 100% Pure Pumpkin/Put into small serving bowl
Sprinkle thin layer Cinammon over top
Sprinkle thin layer Dutch Processed Baking Cocoa (I used Ghirardelli)
In separate bowl, Mix 1/4 cup Coconut Milk with 1-Tbsp Cocoa/Add to all
Add 1/2 cup Crushed Walnuts
Stir all well
Heat in microwave 2-3 minutes/stirring once in a while
Careful...Lava burns!
Recommended Optional Topping!:
VEGAN Fluffy Buttercream Frosting
Borrowed from Isa Chandra and Terry Romero-
Beat together:
1/2 cup nonhydrogenated shortening with 1/2 cup nonhydrogenated margarine and 3 1/2 cup powdered sugar (wow--yes, we're talkin' sweet here!)
Watch it get fluffy after maybe 4-5 minutes...
Then-Add 1 1/2teaspoons Vanilla Extract and 1/4cup Plain Soy Milk or Creamer
Beat for additional 4 minutes.
